Chocolate Zucchini Cake

I usually make this in a bread pan for a dessert bread. It's super good!

2½ cups flour
½ cup cocoa
2½ teaspoons baking powder
1½ teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
¾ cup butter or margarine (1½ cubes)
2 cups sugar
3 eggs
2 teaspoons vanilla
2 cups shredded zucchini
½ cup milk
1 cup nuts

Mix.  Pour in greased pan and bake at 350 degrees for 1 hour.  Cool in the pan for 15 minutes, then remove and cool more.

Crepes

I was at work one day when one of my co-workers and I got off on a tangent about food, which isn't super unusual. But what was unusual is that we decided to make breakfast after work. This is actually her recipe. It is delicious. They can be used either as dessert crepes or for anything else. The little bit of sugar in them doesn't interfere with other flavors such as ham and cheese.

2 eggs
1 cup milk
1 tablespoon sugar
¼ teaspoon vanilla Dash salt
1 cup flour
2 tablespoons butter or margarine, melted

In blender container place eggs, beat. Pour in milk. Add sugar, vanilla and salt; blend. Then add flour and butter; blend on low speed just until smooth, scraping down the sides if necessary. Cook in a frying pan at medium heat. Serve with whatever you want inside (i.e. ham and cheese, ice cream, lemon juice and powdered sugar, fruit and whipped cream, lettuce and tomatoes, etc.).

Super Easy Fudge

I came across this recipe on the internet over the holidays when looking for something to make in celebration of not only the holidays, but also the end of the semester. I was struggling because I wanted something chocolate, but I didn't have any chocolate chips, which almost all chocolate recipes called for. This asked for only ingredients that I had on hand already (except pecans...but I'm not much of a fan of nuts anyway), and took about 15 minutes to make. I put it in the fridge to speed up the cooling process. It came out super delicious. Great last minute dessert idea! Here's the recipe:

3 2/3 cups powdered sugar
1/2 cup cocoa
1/4 cup milk
1/2 cup butter
1 tablespoon vanilla
1/2 cup chopped pecans, optional

Combine milk, butter, and cocoa in a microwavable bowl. Microwave until the butter is melted. Mix together. Mix in powdered sugar. Stir until smooth. Blend in vanilla and pecans.Spread into a buttered 8-inch square pan. Cool and cut into squares.
